This course invites you to sublimate seasonal red fruits by marrying them with the finesse of chocolate. Accompanied by a passionate pastry chef, you'll learn how to create two refined desserts. A fine raspberry-vanilla tart, elegantly garnished with an intense raspberry confit and a delicate vanilla cream. A strawberry revisited, built on a madeleine cookie with a creamy Ivory white chocolate ganache.
