New for 2026

The name came naturally. Vervinia unites verbena and grapevine, the two pillars of my life as a chef. Verbena embodies plant life, freshness and clarity. The vine embodies the earth, memory and transmission. Between the two, there's my culinary writing: a cuisine d'auteur, local, sensitive, in direct contact with local producers.

When I cook, I don't try to impress. I seek to touch. To provoke a memory, an emotion, an inner resonance. For me, a dish is a language: it tells of the season, the climate, the living, the moment. I compose with plants, earth, fire and slowness. I refuse to freeze things: I want to make them vibrate, to make them exist.
